The Ultimate Air Fryer Temperature Chart for 2026 (Beef, Chicken, Pork, Fish)

Let’s play a game. It’s called "Is This Chicken Done or Will It Poison My Entire Family?"

If you own an air fryer, you’ve played this game. You pull out a chicken breast, it looks golden and crispy on the outside, but you have trust issues. So, you slice it open. It’s white. But is it cooked white, or just warm white? You put it back in for 2 minutes "just to be safe."

Congratulations, you are now eating chicken jerky.

In 2026, we are done with guessing. We are done with slicing our beautiful steaks in half to check the color. We are cooking to temperature, not time.

The Golden Rules of Air Frying

  • Beef: Needs to be pulled before it hits the target temp (it keeps cooking while it rests).

  • Chicken: Needs to hit the safe zone, but not a degree over, or it dries out instantly.

  • Pork: Contrary to what your grandmother told you, it does not need to be cooked until it resembles a shoe sole. A little pink is fine (and delicious).


The 2026 Air Fryer Temperature Chart

🥩 BEEF (Steaks, Joints, Roasts)

The air fryer is a steak machine—if you don't overcook it.

  • Blue (Rare): 52°C (125°F) — Cool red center.

  • Medium-Rare (The Sweet Spot): 57°C (135°F) — Warm red center. The holy grail.

  • Medium: 63°C (145°F) — Warm pink center.

  • Well Done: 71°C+ (160°F+) — We aren't judging you, but the cow might be.

Pro Tip: Take your steak out when it is 2-3°C lower than these numbers. As it rests on the plate, the internal heat will finish the job.

🍗 POULTRY (Chicken, Turkey, Duck)

The "Danger Zone" meat. This is why you bought an air fryer, right?

  • Chicken Breast: 74°C (165°F) — Safe, juicy, perfect.

  • Chicken Thighs/Legs: 79°C (175°F) — Dark meat is tougher; it actually tastes better cooked a bit higher.

  • Turkey (Whole): 74°C (165°F) — Check the deepest part of the breast and thigh.

Why the Probe Matters Here: If you rely on the air fryer "preset" button for chicken, you are likely cooking it to 85°C+ without knowing. That’s why your chicken is dry. Pull it at exactly 74°C, and it will change your life.

🐷 PORK (Chops, Loins, Roasts)

Stop drying out your pork chops!

  • Medium: 63°C (145°F) — Blushing pink. Yes, it’s safe. Yes, it’s juicy.

  • Well Done: 71°C (160°F) — Still good, but getting firmer.

  • Pulled Pork: 95°C (205°F) — You need to go high to break down the collagen so it shreds apart.

🐟 FISH (Salmon, White Fish)

  • Done: 63°C (145°F) — Flaky and opaque.


"Do I Really Need to Memorize This?"
