Essential For Food Safety
As a chef for 25 years, Food thermometers allow us to check if food has been cooked to a safe temperature. We cannot see bacteria, and whilst over time we improve our instincts of doneness visually, we constantly probe our cooking and record the temperatures. This is part of the Environmental Health legislation. So if us professionals are using temperature probes, it's a good indication that you should too.
Kills Bacteria:
Cooking to the correct temperature kills bacteria. It ensures food reaches the minimum internal temperature required to kill harmful pathogens like salmonella and e. coli.
Key Internal Cooking Temperatures to Know
Poultry (Chicken/Turkey): 74°C
Ground Meats: 71°C
Fish: 63°C
Beef/Pork/Lamb (Steaks & Roasts): 63°C (with a 3-minute rest time)
You can take a look at this chart, or receive it free when you purchase of an Air Fryer Probe

This chart gives you a full breakdown of safe meat temperatures as well as your preferred doneness temperature for beef and steaks. It is also made of durable PVC that is wipe clean and magnetic.
Is This Why Restaurant Food Is So Moist
Yes!! In high end kitchens, rational ovens record internal temperatures whilst food cooks, and alert chefs when the required temperature is reached. But a good rational oven can cost £25k. So spending under £30 on a decent temperature probe is a great way of simulating restaurant cooking without having to remortgage your house!
Prevents Overcooking (and Dry Food)
Cooking times vary, cooked temperatures do not. Many home cooks overcook food "just to be safe," resulting in dry chicken or tough steak. A great meal in a restaurant starts with it being perfectly cooked. A thermometer allows you to cook with precision.
Keeps It Moist:
By pulling food off the heat the moment it reaches the target temperature, you keep natural juices inside the meat. This prevents them from evaporating.
Carryover / Residual Cooking:
Large cuts of meat continue to cook after you remove them from the heat. A thermometer will alert you to whip out a roast beef at 55C, knowing it will rise to a perfect 57C (medium rare) while it rests, rather than overshooting the mark.
Consistency and Quality
If you have ever wondered why a recipe turned out perfectly one time and poorly the next, temperature is often the variable.
Repeatable Results:
A thermometer ensures you can replicate your success every time. Keeping a family favourite meal sustainable with the kids. There's nothing worse than making a new dish that is a success. Then, the next time, it gets rejected because it was dry and not the same. Data driven cooking gives you consistency.
Texture Control:
For items like custard or caramel, a few degrees difference can change the texture from liquid to a stodgy mess. A thermometer manages these delicate chemical changes and teaches you when critical temperates are reached, and pin pointing when you need to pay extra attention.
